Operation Principle of Pastry Sheet Making Machine

The batter is prepared according to the production process requirements of the filo dough. The batter is heated and baked by a round roasting wheel. When the roasting wheel rotates to an angle of 270-300 degrees, the batter is mature and becomes filo dough, puff pastry or other flake food with a fixed thickness.

Put the mixed batter into the batter bucket and bake on the baking wheel. The batter pump delivers the batter to the nozzle, and the clutch lever is operated to make the batter adhere to the surface of the roasting wheel. After the filo dough is formed, it is automatically separated from the roasting wheel and cut into square puff pastry sheets.

Main Components of Puff Pastry Sheet Making Machine

• Batter storage tank: Stores the mixed batter.
• Delivery pump/pipeline: Delivers a metered amount of batter to the baking area.
• Scraper or nozzle: Controls the thickness and width of the batter to ensure even spreading.

• Drum: Equipped with a rotating metal drum (usually electrically or gas-heated), the batter coats the drum surface and bakes.
• Temperature control system: A PID thermostat adjusts the temperature (usually 180-220°C) to prevent burning or softening.
• Speed-controlled motor: Controls the speed of the drum/plate to adjust the thickness and cooking time of the puff pastry sheet.

• Circular or straight cutter: Cuts to a set length (such as round or square).
• Scrap recovery: Excess puff pastry sheets are returned to the feed system via a conveyor belt (reducing waste).

• Conveyor: Transports the puff pastry sheet to the stacking area.
• Guide: Automatically stacks the wrappers according to a set number (e.g., 10 sheets per stack).
• Counting sensor: Controls the stack size and triggers the packaging signal.

• PLC/Touchscreen: Sets parameters (temperature, speed, cutting size, etc.).
• Sensors: Detect batter flow, temperature, stacking number, etc.
• Alarm: Automatically shuts down the machine in the event of an abnormality (e.g., material shortage, overheating).
